My version includes plenty of fresh mint and coriander, mustard seeds for added depth, sweet peas stirred through at the end, and a generous squeeze of lemon juice to bring it all together.

For the kebabs:
• 500g lamb mince
• ¼ cup coriander, chopped
• ¼ cup mint, chopped
• 1 green chilli, finely chopped
• 3 garlic cloves, minced
• 1 tsp ginger
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1 tsp garam masala
• Salt, to taste
For the chutney:
• 2 tbsp oil
• 1 tsp mustard seeds
• A few curry leaves
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 4 ripe tomatoes, chopped
• 1 tsp chilli powder
• 1 tsp ground cumin
• ½ tsp turmeric
• 2 tbsp mint, chopped
• Salt, to taste
• 1 cup frozen peas
• Juice of 1 lemon
