Starting with St. Louis cut spare ribs, both racks are marinated, seasoned, and smoked low and slow on the Yoder Smokers YS1500s. Then the paths diverge. One rack gets wrapped with honey and additional seasoning for a tender, juicy wet finish, while the other stays on the grate to build a rich, smoky bark.
The result? Two incredible styles of ribs from one cook, each bringing something different to the table.
