Türkiye's pizza inspired by the Turkish street food staple, Lahmacun which is a thin flatbread topped with a spiced meat mixture and baked off until crisp. The name comes from the Arabic, "lahm bi ajeen", meaning "meat on dough". and the dish is popular in Türkiye, Armenia, and parts of the Middle East. It's made by chopping tomato, a mixture both sweet and hot peppers, onion, garlic, and parsley until fine. That gets mixed with ground lamb, hot turkish red pepper paste, tomato paste, paprika, and salt. My pizza version starts with my rolled and cured tavern dough and it gets topped all to the edge with the spiced lamb mix.
