I’ve gotten a lot of questions about how I cut my onions, so here’s a quick explanation! The key is to hold your knife at a slight angle so the blade doesn’t go all the way down to the cutting board. You want each cut to stop just short of the root end, leaving the base of the onion intact. That keeps all the layers together while you’re making your cuts, so the onion stays in one piece instead of falling apart. Once you’ve made your cuts, simply slice across the onion to dice it. I’m definitely not a trained chef, but I saw a chef use this technique years ago, and it’s been my favorite way to cut onions ever since. It’s quick, easy, and gives me nice, even dice every time.
