Belgium's pizza is inspired by their national dish, Moules Frites, which translates to mussels and fries. The dish starts by sauteeing shallots and garlic in a mix of butter and olive oil followed by white wine and mussels. They steamed for a few minutes until the mussels open and the meat is removed from their shells and set to the side. To build the sauce, I start with a roux then add the strained cooking liquid, reserving the shallots and garlic, cooking til thickened and it's finished with a touch of heavy cream and lemon juice. The pizza starts with my tavern dough that gets an even layer of that sauce, the cooked mussels, the reserved shallots and garlic, and shredded mozzarella.
