On a Sunday morning at the Machine Shed in Urbandale, the air smelled like butter before the door even opened. Servers carried cinnamon rolls through the dining room on wide plates, each pastry the size of a newborn’s head and shining beneath a coat of icing. Silver warming urns cradled breakfast tacos and biscuits and gravy while a chef stood by at the omelet station flipping eggs. A server wearing denim overalls and a red gingham button-down shirt hustled past with a new tray of bacon, the edges still sizzling. This is the Machine Shed’s thesis, served up in scent and steam: the Midwest plated like comfort itself, a landscape you can taste.
