The team @ballerinafarmstore (@cheftiffin @averyjensenn with chef @itsmarinasanchez ) did an incredible job prepping the trout for the fire, and I had the absolute pleasure of stepping up to the coals to cook the proteins for there first ever “roots to revel ballet dinner in the fields “ . By wrapping the fish tightly in the leaves, we created a natural wrapper. The trout didn’t just grill—it steamed perfectly inside its own little parcel, infusing the flesh with a subtle, earthy sweetness from the fig leaves and locking in every drop of moisture.
