I always wonder why we leave cake for birthdays only!
Lately we’ve been baking cake as a fun indoor summer activity on a rainy day or when we need a break from the heat
So if you needed a sign to bake a cake for no reason at all, let this be it!
This Funfetti recipe is my kids absolute favourite!
Ingredients:
3¾ cups all-purpose flour
2½ teaspoons baking powder
1 teaspoon salt
2⅓ cups granulated sugar
1 cup butter softened
⅓ cup vegetable oil
2 tsp vanilla extract
1⅓ cups buttermilk
7 large egg whites (room temperature)
1 cup sprinkles
Combine flour, baking powder and salt. Set aside.
In stand mixer, combine butter, oil and sugar. Mix on medium until fluffy (a few minutes). Slowly add egg whites. Add vanilla until combined.
Add some of your flour mixture and beat until just combined. Then about half of your butter milk. Continue adding a bit of each until all is combined. Fold in sprinkles.
Split equally into 3 8 inch round pans. Bake at 350 for about 30 minutes. C...
