Michael Fox, co-founder of Fable Food Co, ran the numbers on his own 41 acres in Queensland. Converted to grazed beef cattle, the land would sustain about 4.2 people a year. Converted to mushroom farming, it could feed around 4,200. Same soil. Same rain. Same acres. A thousand times more people fed. Those are Fable's own calculations, and even with generous margins for error, the gap is staggering. That's the part of this conversation we skip too often.
