Ingredients
125g unsalted butter, softened
135g dark brown soft sugar
90g caster sugar
1 medium egg
1 tsp vanilla extract
220g self-raising flour
½ tsp salt
200g milk chocolate chips
Method
Preheat your oven to 180°C (160°C fan) and line two baking trays.
Cream together the butter, dark brown sugar and caster sugar until light and fluffy.
Beat in the egg and vanilla extract.
Fold in the self-raising flour and salt until a dough forms.
Stir through the chocolate chips.
Roll into balls (around 70–80g each for large bakery-style cookies) and place well apart on the trays.
Bake for 10–12 minutes until the edges are golden but the centres still look slightly underdone.
Leave on the tray for 10 minutes before transferring to a wire rack to cool.
