My brother and his family eat very clean, which is a great example for us so this was my take on meal prep for him and his family this week while they were in town visiting!
Loaf Pan chicken is the ultimate meal prep flex, not to mention it makes the juiciest chicken ever. If you’ve never tried it, now’s the time. It couldn’t be easier to make, and made great lunches for us all week (the kids even took it to camp).
Loaf Pan Chicken: Chicken thighs tossed with olive oil, salt, pepper, garlic powder, onion powder, paprika, and oregano. Spray a loaf pan with oil, pack the chicken in, and bake at 450°F until the internal temperature reaches 170°F, about 45 minutes depending on your oven.
Sweet Potatoes: Toss with olive oil and salt. Roast at 425°F for about 20 minutes, cut side down.
Cauliflower & Cabbage: Slice thick, drizzle with olive oil, and season with salt, pepper, and garlic powder. Roast at 450°F, flip after about 10 minutes, then broil for extra char if desired. Finish with ...
