There’s just something about Sundays and a good beef pot roast 🤍 And I think this might be my favorite one I’ve ever made. The beef is fall-apart tender, the potatoes soak up all that rich gravy, and it’s SO good.
Sunday Pot Roast
Ingredients
For the roast:
• 3 lb chuck roast
• 1½ tsp salt
• 1 tsp Montreal steak seasoning
• ½ tsp black pepper
• 1 tbsp oil
For the pot roast:
• 2 tbsp butter
• 1 large onion, diced
• 5 garlic cloves
• 1½ tsp brown sugar
• 1 tsp salt, or to taste
• ¼ tsp black pepper
• 2 tbsp tomato paste
• 2 tbsp all-purpose flour
• 4 cups beef broth
• 3 large carrots, cut into thick pieces
• 2 lbs baby potatoes
• 4 sprigs fresh oregano
• 2 sprigs fresh rosemary
• 4 sprigs fresh thyme
• 2 fresh bay leaves
Directions
1. Preheat oven to 350°F. Season chuck roast with salt, Montreal seasoning and black pepper.
2. Heat oil in a Dutch oven or oven-safe pan. Sear roast for about 5 minutes per side, then remove and set aside.
