Trail Feast gives you a proper walk-through of their Poc Chuc recipe and instructions to make this by your campsite the next time you’re on trail. Poc chuc is a famous grilled pork dish from the Yucatán Peninsula in Mexico. Its name comes from Mayan words: poc means to toast or grill, and chuc means charcoal. Thin pork slices soak in a tangy bitter orange marinade. Finished with Xni-pec (pronounced “shnee-peck”) - a fiery traditional salsa and pickled onion condiment from the Yucatán Peninsula in Mexico.
