#onestopmeals is a new version of a classic dish.
Have you ever tried lasagna in soup form? It’s not far off from your classic baked lasagna, but it’s fun to combine the ingredients in a new way and cuts your prep time in half.
• Heat a large stock pot over medium-high heat and add 1 lb sweet Italian sausage and 1 diced onion. Break apart the meat and cook until the onion is translucent and the meat is cooked through.
• Add 4 frozen garlic cubes and 2 Tbsp tomato paste. Stir until combined well.
• Add 1 jar marinara sauce, 2 cartons chicken broth, 1 Tbsp Italian seasoning, 1 tsp salt, and 1/2 tsp pepper. Bring to a boil, then add 1/2 lb pasta. Cook for about 10 minutes, until al dente.
• Meanwhile, combine 1 cup ricotta, 1 cup grated Parmesan, and 1 Tbsp chopped parsley in a small mixing bowl and stir until smooth.
• Serve the lasagna soup in a bowl and top with a scoop of the ricotta mixture.
