On a sultry Friday in suburban Honolulu, 95 year old Ruth Chang made me lunch. She minced root vegetables with a cleaver in each hand, mother of pearl earrings swinging, in leopard print loafers. “I cook every day,” she told me. “Once you stop, you lose it.”
