Nick Star wanted a good Reuben. But by the time he and his wife Fiona Amelang moved to Portland in 2023, the Rose City was becoming a ghost town for corned beef sandwiches, with Kornblatt’s closing that March and Kenny and Zuke’s following in November. So Star decided to do something about it. He spent a year perfecting the art of curing pastrami and corned beef while cooking at local restaurants. Then, last year, he opened judahs_deli.
