Here is a terrific vegetarian version of the classic meat rolls. Filled with a creamy spinach and cheese mixture, these rolls can be assembled today and frozen until you are ready to serve them. Take them out of the freezer the night before you want them and let them sit in the fridge to thaw overnight. Bake off the thawed rolls the next day. You can also make the filling a couple days before you want to assemble these and just park in the fridge. Leftover filling can be used to make future rolls or to make lasagna or lasagna rolls . . Spinach & Cheese Puffs . . 2 sheets puff pastry (I used a brand where the package of puff pastry has 2 sheets) Filling: 1 (10oz) pkg of frozen chopped spinach, thawed and squeezed out of all water 
1 (15oz) container ricotta 1/2 cup crumbled feta 3/4 cup grated parmesan
1 cup shredded cheese mozzarella (but you could really use any type cheese)
2 garlic cloves, chopped 1 egg
