Right now, amaranth is hard to miss. By late summer, its dramatic tassels and electric foliage are at their peak - in the garden and cut for arrangements.
Not quite a grain, not just a flower, and sometimes a weed that farmers would gladly find themselves rid of, amaranth has had many identities over the centuries. Once a staple crop of the Aztec Empire, it’s now celebrated as both a nutrient-packed “superfood” and a garden standout. Its edible leaves and protein-rich seeds might even end up in your kitchen.
Whether you know it as love-lies-bleeding, a leafy green, a drought-tolerant ornamental or that volunteer seedling that keeps popping up where you don’t expect it, amaranth proves that some of the most compelling plants refuse to stay in one category. 🌿
