Almond paste scones—some of my fav scones I’ve made to date! Comment PASTE For the recipe 💕 These use one of my favorite base recipes from the scone bake off (testkitchen) layered with homemade almost paste. You’ll roll it out and basically laminate it into the scone dough until you have a rich and tender scone laced with almond + jam ✨
For these, you’ll need:
2 cups all-purpose flour (280g)
1 tbsp baking powder
3 tbsp sugar
1/2 tsp kosher salt
5 tbsp cold unsalted butter, cut into 1/4” cubes (70g)
1 cup heavy cream (227ml)
For the almond paste:
heaping 3/4 cup almond flour (90g)
9 tbsp powdered sugar (70g)
1.5 tbsp water (20ml)
1/2 tsp almond extract
3-4 tsp raspberry jam, optional
For the glaze:
1/3 cup powdered sugar
~1.5 tsp raspberry jam
2-3 tsp cream or milk
Whisk together the powdered sugar and jam until clumpy. Add milk a little at a time until you have your desired consistency (add more if needed). Spread over the scones and let set for a few hours to harden.
