I have been seriously in the mood for all things cozy and with that comes soup! Another new recipe for you guys where I basically combined two of my favorites into one based off of what I had! This is going in my number 2 spots for favorite soups! Tuscan White Bean Sausage Soup✨ 2 tbsp olive oil 4 Italian sausage (or Italian chicken) 1 white Onion 2 large Carrots 4 cloves garlic 5 baby Potato’s or 2 large potatoes 1 tsp Italian seasoning 1 tsp salt & pepper 1/4-1/2 tsp red pepper flakes (optional for spice) 2 tbsp tomato paste 1 can of white beans 1 box chicken broth Parmesan rind 1/3 c chopped Sun dried tomatoes 1 c Spinach 1/3 c heavy cream 1/3 c shredded Parmesan Heat olive oil in a large pot over medium heat. Remove sausage from casings, crumble, and cook until browned then remove. Add onion and carrots and sauté for 4–5 minutes. Stir in garlic and cook for another minute.
