✨Almond croissant baked oats… but make them nourishing ✨
This is one of those breakfasts that tastes like cake but is actually packed with goodness and keeps you full all morning.
✨ Serves 6
What you’ll need:
2 ripe bananas
2 eggs
150g Greek yogurt
250ml milk
2–3 tbsp maple syrup or honey
1 tsp vanilla extract
1 tsp almond extract
200g oats
50g ground almonds
1 tsp baking powder
½ tsp bicarbonate of soda
2 tbsp almond butter
Handful of flaked almonds
Method:
Mix the wet ingredients.
Add the dry ingredients and mix until combined.
Stir through the almond butter.
Pour into a baking dish, sprinkle with flaked almonds and bake at 180°C (160 fan) for 25–35 minutes until golden and set (I like to bake until it’s slightly underbaked so that when I reheat it in the morning it doesn’t dry out).
I always serve it warm with Greek yoghurt and berries.

1 tbsp chia seeds
1 tbsp ground flax seeds
