Chicago Squares Week 2: @Chicago Bears 🐻 vs @Vikings 🟣 The Bears are back home at Soldier Field for the 2026 home opener against @jjettas2 and the Minnesota Vikings and this week's pizza is inspired by Minnesota's large Hmong population, the largest in the United States. Specifically, inspired by a traditional Hmong sausage, which of course, I made from scratch. It begins with cubed fatty pork shoulder, that I ground and mixed with a ton of aromatics; garlic, lemongrass, ginger, thai chili, scallions cilantro, fish sauce, lime juice, and oyster sauce. I then made kua txob, a Hmong hot pepper sauce that's spicy, acidic, and funky. FInally, a fittingly Vikings' purple sticky rice. The pizza begins with the kua txob as the base, and gets topped the Hmong sausage, sticky rice, and shredded mozzarella.
