An update from @treasurycider: This past year we added elderberries to our organic berry acreage with no specific set of intentions for them, other than to experiment with a co-ferment.⠀ We had a good crop, harvested them at peak ripeness and froze them until pressing time. They were macerated and combined with a barrel of Winesap juice. And then we let nature take its course. ✨⠀ ⠀ The results have been pretty intense, in both color and flavor. Super tart and nicely tannic.
