We LOVE Christmas but HATE waste!! So we have come up with a couple of recipes to help you use your leftover Xmas dinner bits over the next couple of days... Our 'Boxing Day Frittata' is extremely versatile so if you don't have any pigs in blankets left, then why not pop in some leftover turkey? or even some sprouts!!  You will need: 10 Cherry tomatoes on the vine 8 Pigs in blankets 6 Cooked potatoes (Roast potatoes are perfect) Salt and pepper 3 Free range eggs 1 handful of salad leaves Here’s how: Remove 4 tomatoes from the vine to use in the frittata and cut them in half. Place the cherry vine tomatoes onto a tray with a drizzle of olive oil and a sprinkle of sea salt, then roast in the oven 170c for 6-7 minutes. Meanwhile, pre heat a nonstick frying pan. Break up the pigs in blankets and add them to the pan with the potatoes, if you are using one of our can to pan frying pans you won’t need any oil if not just a splash is required.
