Our favourite #campervan cook martindorey is back with another blinder of a #recipe for you to enjoy. He says, "What’s the secret to making the perfect mackerel sandwich? Heaven knows, honestly. I thought I had it when I presented it to my friends one evening. But no, apparently the mackerel sandwich is only practically perfect. That’s fine by me. However, we did discuss what would make it perfect and the feeling was that perhaps it’d be beetroot. Interesting, but perhaps a taste too far! Let me know. For 1 practically perfect sandwich: 2 fresh mackerel fillets, deboned A little plain flour for dusting A pinch of chilli flakes 2 slices of very fresh white bread (doorstep style) A handful of watercress 1 tomato thinly sliced 3 cornichons, sliced 1 tsp of creamed horseradish Black pepper Glug of olive oil Knob of butter Method: Melt the butter in a frying pan, add the olive oil and heat over a medium heat.
