Mussels in a white wine sauce with crème fraîche.
Ingredients: serves 2 appetizer portions or 1 entree
1lb mussels
1 Tbsp olive oil
3 Tbsp Butter
2 celery stalks sliced
2 shallots sliced
4 garlic cloves sliced
1/2 tsp red pepper flakes
Pinch of salt
2 Tbsp chopped chives
1 Tbsp fresh tarragon leaves (about 3 sprigs)
3/4 C dry white wine (I used sauv blanc)
1/3 C crème fraîche
Lemon wedges and parsley for garnish
Directions
In a skillet or large pot add olive oil and butter. Once melted add in celery, shallots and garlic. Cook until fragrant. Season with salt and add red pepper flakes. Add in chives and tarragon. Add in your wine, once it’s at a simmer add in your mussels. Cover for 4-6 minutes then discard the ones that do not open. Remove the mussels and set aside. Mix in your crème fraîche and squeeze in a lemon wedge.
Serve with a baguette or side of pasta.
