The higher the number, the hotter the pepper! * Jalapeño: 2,500–8,000 SHU * Serrano: 10,000–25,000 SHU * Bird’s Eye: 50,000–100,000 SHU Jalapeños turn red when fully ripe and are commonly dried and smoked to make chipotle peppers. Serranos are best eaten raw and are commonly used in fresh salsas.
