We share a connection that we also both have worked at Michelin restaurants (Ryan at the iconic The French Laundry) so I wanted to create a dish that showed technique, pushed some boundaries & was fun and creative SECONDARY INSPO -Not only just pasta, but Ryan loves making egg yolk based pastas & has his signature “Doubling the eggs” series so I wanted to add that element into the dish but also editing style during the pasta making -Ryan is a big sports fan especially team sports. A great team is one where it’s balanced & everyone works together & highlights each ones skills.
