We call this veg bake ‘halloumi veg’. My mum invented it and it can be made with red pesto like I’ve done in this video, or green pesto. You can also find wacky pesto flavours in farm shops which it can be cool to experiment with in this dish. Also… HOW PERFECT WAS MY RICE.
