You may have seen a lot of images of sunflowers cropping up recently, because this beautiful American native is being used as a symbol of support for the Ukrainian people. Sunflowers are amazing plants, first cultivated in North America as far back as 3000 BCE and used for food, medicine, dye, and oil. Sunflowers were taken to Europe around 1500 and were cultivated more widely in Eastern Europe by the 1880’s, later becoming the state flower of Ukraine. Sunflowers are smart also, as they track the sun in a behavior called heliotropism. Did you know the tallest sunflower on record is 30 feet and one inch tall?
