No cheeky roast dinner for me this eve but this was delish! 😋
Roasted butternut squash & carrots on a bed of cous cous mixed with toasted pistachios, dried cranberries all topped with homemade chimichurri & toasted almonds. I also added some yoghurt post pic which worked really well!
