I made this Pistachio Raspberry Cake for my moms birthday. And I made a couple of mini versions of the cake so I could freeze a whole mini cake that she can have when she visits from Brazil. It’s always fun to make mini cakes. I simply halved the cake recipe and obtained two mini 3 inch cakes. 🩷 recipe on my website! Aren’t mini cakes so much more fun to eat anyway?
