Making a PUMPKIN ROLL with MEMAMA…. Instructions below⬇️ Batter: 3 eggs 1 cup of sugar 2 teaspoons cinnamon 1 teaspoon baking soda 3/4 cup pumpkin 3/4 cup flour 1 teaspoon lemon juice 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1 cup chopped pecans (to top) Filling: 2 tablespoons butter 1 teaspoon vanilla 8 oz. cream cheese 1 cup powdered sugar Spray baking sheet with Pam cooking spray, line with wax paper and spray again. Poor batter in and sprinkle pecans on top. Bake at 375 degrees for 15 mins. Right when you take the cake out of the oven flip it onto a hand towel, remove the wax paper and roll with the towel. Let it cool, unroll it and fill it up!
