She’d step off the school bus and head right to the shucking stalls of her family’s oyster shack on Florida’s Apalachicola Bay. Lynn bought the business when her parents retired in the late-1990s and at one point had 40 harvesters and 25 shuckers in her employ. That was before the impact of climate change hit the bay. Today, with no wild oysters left to shuck, Lynn turned her business into a seafood store and restaurant and started selling farm-raised oysters. As Lynn reveals in the second episode of What’s Eating America, “It really upset my mom because she felt like, you know, we were giving up. And I said no, mom, we’re not giving up.
