I was so honored to be a part of @verlasso’s #TheFutureOfFood Dinner & Panel on #aquaculture during @sxsw to highlight the critical work of #waterfarmers. I believe that we can eat ourselves into a world that is better for all of us, and that is aquaculture’s potential for solving problems. History was made at @SXSW! @cheftysoncole of @uchiaustin prepared the first farm raised halibut served in America. Grilled Glitne Snow White Halibut with Coconut Beurre Blanc, Romanesco, Black Trumpet Mushrooms, Hazelnuts and Grapes. @glitnehalibut is raised in fresh, cold and salty seawater raceways beside the Sognefjord in Bjordal, Norway by a company dedicated to their people, fish welfare, respect for the environment, and have a commitment to true craftsmanship. #aquacultureplated
