Things took a turn to the awesome with each course at Le Palais, this is a “Kung Pao” version of frog stomachs.. each one melted into your mouth with one bouncy springy chew. That’s the QQ textural zenith Taiwanese cooking is prized for. The stomachs like little pasta shapes held the sauce beautifully... lots of chilies but not hot.
