My dad’s side of the family is from Sicily and southern Italy, so we’d make caponata quite a lot- this recipe is inspired by all those delicious flavors! Believe it or not, I used to not be a fan of eggplant. But when it’s made like this…it’s something I could eat breakfast lunch and dinner (and I’m not exaggerating here, I ate all these leftovers for almost every meal the past week 🤩)
It’s so good served on crusty bread with a creamy smear of vegan cheese!
