This Strawberry Shortcake Ice Cream Pie is just 7 ingredients and VERY minimal effort. This is the perfect cake to celebrate summer birthdays, bring to a party, or just make for yourself because why not?! I’ve got a few slices stashed in my freezer not going to lie… Ingredients: Crust: 24 Golden Oreo cookies  4 tablespoons coconut oil or butter, melted Ice Cream Pie: 3 1/2 cups vanilla ice cream  3 1/2 cups strawberry ice cream 1/3 cup strawberry preserves   Strawberry Shortcake Topping: 12 Golden Oreos  0.8 oz bag freeze dried strawberries  Instructions: In a food processor combine the cookies and melted coconut oil or butter on low for 45-60 seconds until cookies are fine like coarse sand and fully combined with the oil or butter.   Line a 9 inch circle pan with parchment paper and pour the crust mixture in.
