Homemade corn tortillas, barbecued pulpón de vacío , fresh tomato pico, guacamole and a little lime sour cream. I kept everything mild by swapping the jalapeños for green pepper and leaving the chilli out of the guacamole, so there was loads of flavour without too much heat. The beef got a good char on the barbecue, stayed beautifully pink inside, then I sliced it up and piled everything onto a board.
