Spontaneous baking mood! Ginger cake with dates and several spices such as cinnamon, nutmeg, and ginger. To give the cake a rich and deep flavour and to break the sweetness, I added coffee to the dates. To balance the flavours, I added more salt that I'd normally add because I knew this cake could handle it due to the sugar overload.
