Japanese bouncy jiggly Ube cheesecake from kekimoderncakes in New York! It’s one of my favorite desserts in the city. I’d say at least top 3.
It’s carefully baked using a soufflé-like technique, making it bouncy and delicate. It doesn’t have a strong cheese flavor; it’s more like biting into a cloud ☁️😍 I tried it for the first time back in 2019, and not to be dramatic, but I think it changed my life.
This is the Ube version, which is why it is this bright purple color; Ube is a Southeast Asian purple yam widely used in desserts. It has a nutty vanilla flavor, and its violet pigment is naturally occurring.
They’re sold online and shipped everyone but if you can go into the store and try it fresh, please do so!! 🫶🏽
