* 2 cups cane sugar
* 2/3 cups water
* 3/4 cup heavy whipping cream
* 4 tbsp unsalted butter
* 1 tsp vanilla extract
* 1/8 tsp salt
In a heavy-bottomed saucepan, combine the sugar and water over medium heat. Do not stir, instead swirl the pan gently to ensure even heating to prevent crystallization. Bring to a boil: It will start to change color from clear to golden and then to amber. This process may take about 10-15 minutes. You can adjust the heat if necessary to prevent burning.
