As the national dish of El Salvador,
#pupusas are a cultural, culinary touchstone. And they’re delicious. They begin as balls of corn-flour dough; the dough gets flattened and topped with a variety of savory fillings (ours are filled with chicken, mozzarella cheese, and roasted Hatch chiles), then “sealed” back up into balls, gently flattened again, and cooked on a griddle or skillet. They’re kind of like savory, stuffed, corn-flour pancakes… but better.
